Snappy Nappy Peach Cobbler
Ingredients
6 cups of ripened peaches (8) peaches
1 1/2 cup of sugar
2 tablespoon lemon juice
1 teaspoon vanilla extract
dash of cinnamon
dash of nutmeg
1 1/2 cups of flour
1 1/2 teaspoon baking powder
2 eggs beaten
1/2 cups melted butter or margarine
1/4 teaspoon almond extract
2 tablespoon brown sugar and 1/2 teaspoon cinnamon
2 quart baking dish
Preheat oven to 350 degrees mix peaches 1/2 cup of sugar, lemon juice, vanilla, dash of nutmeg and cinnamon in a bowl. Transfer to dish and set a side. In a separate bowl, mix the remaining sugar, flour, baking powder, eggs, butter, and almond extract. Mix until most and lumpy. Do not over mix. Spoon batter over the peaches, sprinkle with brown sugar and cinnamon mix. Bake for 40 min until golden brown
